I am in LOVE with today’s recipes. Single Serving Chocolate Chip Cookies, Single Serving Carrot Cake, a (pretty healthy) Apple Pie Cheesecake Shake and Chocolate covered Pretzel Buns. Super easy, super vegan and super tasty.

✨INGREDIENTS✨

#1 Carrot Cake For One

2 tbsp shredded carrot = 1 small carrot
1/2 tsp vanilla
1 tbsp veg oil + more for greasing the mug if desired
1 1/4 tbsp sugar
1/4 cup non dairy milk (60ml)

1/4 cup flour + 1 tsp flour (35g)
2 ¼ tbsp oats, small cut
1/4 tsp baking powder
a pinch of salt
1/4 tsp cinnamon

#2 Apple Pie Cheesecake Shake

1 1/2 apples, cut into apple slices, then frozen (weight frozen: 175g – 200g = 6,2 – 7oz)
¼ cup cashews, soaked in water overnight (40g)
1 1/2 tbsp date syrup or 3 soft dates or 2-3 tsp alternative sweetener
1/4 tsp cinnamon
a pinch of salt
2 1/2 tbsp vegan sour cream or vegan cream cheese (or vegan vanilla ice cream or thick soy yogurt)
2/3 cup non dairy milk (160ml)
1/2 tsp vanilla

#3 Pretzel Buns with Chocolate Dip

½ cup spelt flour (60g)
¼ cup warm water (60ml)
1 tsp dry active yeast
½ tsp salt
1 ½ tsp sugar

+ the additional 40g of spelt flour (1/3 cup) you add after the 1 hour of rising!

baking soda solution: 1 tsp baking soda + 1/2 cup water (125ml)

also ¼ cup dark chocolate chips, melted (40g)
or vegan chocolate hazelnut spread or anything else you wanna add

tbh as a dessert this is enough for 2 people haha

#4 Single Serving Chocolate Chip Cookie

1 tbsp cold vegan butter = 15 g
1 tbsp apple sauce
3 1/2 tsp brown sugar
1/4 tsp vanilla sugar

⅓ cup flour = 40g
1/4 tsp of salt
1/4 tsp cinnamon or add 1/8th if you want less of a cinnamon-y taste
1/4 tsp baking powder

also a handful chocolate chunks

I baked mine for around 12 minutes which makes them turn out still soft and slightly undercooked. Leave them in there a couple minutes longer if you like yours more „dry“ – they will firm up once cooled down also.
